Honey Mustard Pork Tenderloin

One sheet pan dinners are the way to go for a busy weekday night dinner. This baked pork tenderloin recipe is super simple, but looks and tastes pretty elegant. Just place all of your ingredients on one large sheet pan, put it in the oven, and dinner is basically done.

I decided to serve the pork with roasted butternut squash, and some amazing caulini (baby cauliflower) that I was lucky enough to find at Trader Joe’s. But of course, there are endless marinades and side dish combinations that you can use with pork tenderloin.


Ingredients (4 servings)

-1 lb pork tenderloin
-1/4 cup honey
-2 tbls mustard
-1 tbl balsamic vinegar
-1 tbl fresh rosemary, finely chopped
-Olive oil
-Salt and pepper
-Optional sides: butternut squash, caulini

Instructions (45 minutes)

1. In a small bowl, mix together the marinade ingredients- honey, mustard, balsamic, and rosemary.
2. Place the tenderloin on a well oiled aluminum lined baking sheet. Spread the marinade all over the pork and season with salt and pepper.
3. Bake at 425 degrees F for about 25 minutes depending on how thick the cut is.
4. Serve with your favorite sides. For roasted caulini, bake at 425 degrees F for 15 minutes, and for roasted butternut squash, bake at 425 degrees F for 40 minutes.
