
About This Recipe:
Lil Frankie’s and Supper are two very well known Italian restaurants in Manhattan, and they are most known for their amazing spaghetti limone. Even though this dish is insanely easy to make, there is something so mind blowing about spaghetti with lemon juice, butter, and tons of parmesan. It’s the perfect 20 minute meal to make during the work day, served with a simple salad or roasted vegetables on the side. I love all things super citrus-y, so maybe start off with just 1 lemon and add more if needed.

Ingredients (4 servings)
-12 oz spaghetti
-4 tbsps unsalted butter
-2 garlic cloves, minced
-1 cup reserved pasta water
-1.5 lemons, juiced
-½ cup grated parmesan
-Salt and pepper
Instructions (20 minutes)
1. In a large pot, bring water to a boil and cook the spaghetti until it is al dente (about 9 minutes.) Once it is done, reserve 1 cup of the pasta water, then drain the spaghetti and set aside in a bowl.
2. Back in the pot over low heat, melt the butter and stir in the garlic for one minute. Add the spaghetti back into the pot and pour in the pasta water (start with 3/4 cup and then add more after the parmesan if needed,) and lemon juice.
3. Slowly sprinkle in the parmesan and constantly toss in order to avoid any clumps in the sauce. Season with salt and pepper, and enjoy!
