
About This Recipe:
It is pretty rare when I am super impressed by my own cooking, but this lemon dill salmon happens to be one of those times. Not only does this recipe require almost no prep work and only 5 ingredients, but the presentation is beautiful and the flavors really shine. This is easy enough for a weeknight dinner, but glam enough for special guests.
I like to serve this salmon with roasted baby potatoes and carrots. I just cut the potatoes in half, chop the carrots into pieces on a diagonal, toss with olive oil, salt, and pepper, and roast at 450 degrees F for about 50 minutes.

Ingredients (4 servings)
-1.25 lbs salmon
-2 tbls butter
-1/4 cup lemon juice
-4 garlic cloves, minced
-2 tbls fresh dill, chopped
–Optional sides: 1 lb baby potatoes and 1 bunch of carrots
-Olive oil
-Salt and pepper
Instructions (25 minutes)
1. In a small bowl, melt the butter and then stir in the lemon juice, minced garlic, and dill.
2. Line a baking dish with aluminum foil and brush with olive oil. Place the salmon on top, season with salt and pepper, and spoon the sauce over the salmon.
3. Completely cover the salmon in the foil and bake at 375 degrees F for 15-20 minutes depending on how thick your salmon is.

Looks juicy and delicious.
