Chicken Butter Lettuce Cups

I have actually never been to PF Chang’s but I have seen pictures and knock off recipes of their chicken lettuce wraps. So I decided to create this recipe based off of how I would imagine and want this to taste like. This dish is a complete meal that is low carb (which is a rare meal for me,) but is filling, colorful, and a great mix of textures. Butter lettuce is the perfect vehicle for the filling, but iceberg or romaine would also work. This only takes 30 minutes from start to finish, and you can easily vary the recipe with what you have on hand.


Ingredients (4 servings)

-1 head butter lettuce  
-1 lb ground chicken
-1/2 white onion, finely diced
-1 red bell pepper, diced
-½ red onion, thinly sliced
-¼ cup peanuts
-Vegetable oil

-½ cup chicken broth
-4 garlic cloves, finely minced
-2 tbls hoisin sauce
-1 tbl soy sauce
-1 tbl rice wine vinegar
-1 tbl honey or agave
-1 tsp garlic chili paste

Instructions (30 minutes) 

1. In a large skillet over medium high heat, pour in 1-2 tbls of vegetable oil and brown the ground chicken for about 6 minutes. 
2. Add in the onion and red bell pepper and sauté for 5 minutes until the chicken is fully cooked and the vegetables are tender.
3. In a small bowl, mix together all of the sauce ingredients and add to the skillet. Simmer on low heat for 5 minutes so that the filling absorbs the sauce.
4. Assemble the lettuce cups by spooning the filling into each cup, and top with the sliced red onion and peanuts.
