No Mayo Chive Chicken Salad

About This Recipe:

I had a random craving for a chicken salad sandwich this week, so I decided to make my own version that would be healthier and tastier than the ones at your local deli. I have never purchased mayonnaise and don’t really ever intend to, so I knew I’d be subbing with plain Greek yogurt instead. And I absolutely love chives, but don’t make dishes with it often so I wanted to incorporate some here (but dill would also be delicious.) Try this elevated chicken salad recipe for your next picnic!

Ingredients (4 servings)

-3 thin cut boneless skinless chicken breasts
-2 celery stalks, finely chopped
-4 ciabatta rolls
-Lettuce (bib or romaine)
-2 tomatoes, sliced
-Olive oil
-Salt and pepper

Chive Sauce
-6 oz plain Greek yogurt
-2 tsps dijon mustard
-1/2 lemon, juiced
-3 tbls chives, finely chopped

Instructions (40 minutes) 

1. Place the chicken breasts on an oiled baking dish and roast at 400 degrees F for 25 minutes. Once cool, chop into small bite sized pieces.
2. In a bowl, mix together all of the chive sauce ingredients. Stir in the chopped chicken and celery, and season with salt and pepper.
3. Assemble the sandwiches with lettuce and tomato slices on the bottom and a scoop of the chicken salad on top.
