For an easy at home brunch, try this delicious and fairly healthy broccoli cheddar quiche. This is the perfect recipe for brunch with friends because there is actually very little cooking, and you could make it ahead of time and just reheat when you are ready. Quiche sounds and looks impressive, but is actually one of the simplest dishes to make. Using a store bought pie crust is the time saving way to go, and is honestly still so good that no one will notice.

Ingredients (6 servings)
-1 pre-made pie crust
-2 cups broccoli florets
-6 eggs
-4 oz shredded cheddar cheese
-1 cup milk
-Salt and pepper
Instructions (1 hour 10 minutes)
1. Bring a pot of water to a boil and cook the broccoli florets for 2-3 minutes. Drain and set aside to cool and try to squeeze out as much water as possible.
2. In a large bowl, beat the eggs and then mix in the cooked broccoli, shredded cheese, and milk and season with salt and pepper.
3. Place the pie crust on a 9 inch round baking pan or pie pan, and pour the egg filling on top. Bake at 350 degrees F for 1 hour until the center has fully cooked and set. Cool slightly and serve!
