Cajun Shrimp & Rice

Looking for something flavorful to spice up your weekday dinner? This Cajun shrimp and rice recipe is full of spices and zestiness! The ingredients list might look somewhat long, but they are mostly simple items that you hopefully already have in your pantry or fridge. This recipe would also work well with chicken, but I was craving shrimp this week. You can also easily adjust the seasoning measurements to match your own preferences (I amp up the cayenne pepper to 1 tsp for myself!)

Ingredients (4 servings)

-1.25 lbs shrimp
-2 tbls butter
-1 onion, finely diced
-1 red bell pepper, largely diced
-4 tomatoes, deseeded and diced
-4 garlic cloves, minced
-1.5 cups basmati or brown rice
-3 cups of liquids (stock or water)
-1/4 cup parsley, chopped
-2 limes (1 juiced, 1 cut into wedges for serving)
-Salt and pepper
-Olive oil

Seasonings
-1 tsp paprika
-1 tsp garlic powder
-1 tsp onion powder
-1 tsp dried oregano
-1/2 tsp cayenne pepper

Instructions (45 minutes) 

1. In a small bowl, mix together all of the seasonings and evenly coat the shrimp on both sides. In a Dutch oven over medium heat, pour in 2 tbls of olive oil and sear the shrimp for 2 minutes per side and then remove to a dish.
2. Melt the butter in the pot and then cook the onion and bell pepper for 2-3 minutes. Then add in the tomatoes and garlic and cook down for 5 minutes. Season with salt and pepper.
3. Add in the rice and liquids, and bring to a boil. Simmer on low heat until the rice is fully cooked and all of the liquid has been absorbed.
4. Sprinkle in the parsley and pour in the lime juice. Add the shrimp back to the pot and serve!
