Shrimp Saganaki

About This Recipe:

Shrimp saganaki is a super delicious and easy Greek dish that is basically a tomato shrimp stew. I believe saganaki just refers to any Greek dish that is prepared in a cast iron or heavy bottomed pan, but you can of course cook this in whatever works. This dish has some of my favorite ingredients- shrimp, tomatoes, feta, and a bit of spice! I like to serve this with toasted bread and a simple side salad, but rice or pasta would also be delicious. Shrimp saganaki is a simple crowd pleaser- opa!

Enjoy!

Ingredients (4 servings)

-1.25 lbs shrimp
-1 onion, chopped
-4 garlic cloves, minced
-1 tbl tomato paste
-28 oz canned diced tomatoes
-1 tbl dried oregano
-1/2 tsp chili flakes
-1/4 tsp paprika
-4 oz feta cheese, crumbled
-2 tbls parsley, chopped
-Olive oil
-Salt and pepper

Instructions (40 minutes)

1. In a cast iron skillet over medium heat, add in 2 tbls of olive oil and sauté the onion for 5 minutes until softened. Then add in the garlic and stir for another minute.
2. Mix in the tomato paste and cook for 2-3 minutes to concentrate. Then pour in the diced tomatoes and sprinkle in the oregano, chili flakes, and paprika. Simmer for 10 minutes.
3. Place the shrimp in the pan and continue simmering until the shrimp is fully cooked (about 10 minutes.) Flip halfway through and season with salt and pepper.
4. Lightly crush the diced tomatoes with the back of a spoon, and top the dish with the crumbled feta and parsley.
