Sometimes you just want a simple and easy meal of carbs and sauce in a bowl, and this spicy peanut noodle dish fits that description. This is a fun Asian twist on your everyday pasta with tomato sauce, and even though it might sound strange to some people, trust me it’s super delicious. The peanut sauce is quite savory even though it is made with peanut butter, and it is so flavorful from just a few ingredients. You will be happily slurping these noodles down.

Ingredients (4 servings)
-12 oz lo mein noodles
-¼ cup cilantro, chopped
-¼ cup chopped peanuts
-1 scallion, sliced
Peanut Sauce
-½ cup peanut butter
-½ cup warm water
-¼ cup soy sauce
-2 tbls chili garlic sauce
-1 tbl sugar
-1 lime, juiced
Instructions (20 minutes)
1. In a large pot, bring water to a boil and cook the lo mein noodles. Reserve 1 cup of starchy pasta water and drain the noodles.
2. In a bowl, mix together the peanut sauce ingredients. Toss the noodles with the sauce and add in a few spoonfuls of pasta water until you get your desired consistency.
3. Top with the cilantro, chopped peanuts, and scallions.
