Smoked Salmon Blinis

I love all things smoked salmon, and these little smoked salmon blinis are the perfect appetizers. Traditionally, blinis are made with buckwheat flour, but regular white flour will work just fine. These look fancy and impressive, and no one has to know that they take just 15 minutes to whip up. If you really wanted to impress your guests, you could also add a tad bit of caviar on top as well.

Ingredients (4 servings) 

-6 oz smoked salmon
-1 cup flour
-1/2 tsp baking powder
-3/4 cup milk
-1 egg
-2 tbls butter
-1/4 cup sour cream
-Dill, for garnishing

Instructions (15 minutes)

1. In a medium sized bowl, mix together the flour, baking powder, milk, and egg until mostly smooth.
2. Melt the butter in a large pan over medium low heat. Spoon 1 tbl of batter to form the blinis, and cook for about 2 minutes per side until lightly golden brown.
3. Top each blini with some smoked salmon, a dollop of sour cream, and a piece of dill.
