
About This Recipe:
As a kid, every Sunday after church in the spring and summer, my mom would buy coleslaw from the local deli and we would make sandwiches for lunch. I absolutely love vinegar coleslaw, and I recently found myself with some leftover cabbage and carrots and decided it was time to make it at home. This is super quick and delicious, and potentially better than any deli’s coleslaw. This coleslaw in a simple turkey sandwich with a bag a chips brings me right back to those childhood Sundays.

Ingredients (4 servings)
-½ small green cabbage, finely shredded
-1 cup shredded carrots
-¼ cup white vinegar
-¼ cup apple cider vinegar
-¼ cup sugar
-Salt and pepper
Instructions (30 minutes)
1. In a small bowl, add the vinegars and sugar. Heat up slightly (either in the microwave for 15 seconds, or on the stovetop,) and mix until the sugar fully dissolves.
2. Add the cabbage and carrots into a container and pour in the vinegar mixture. Season with salt and pepper and let refrigerate for at least 30 minutes.
