Banana Chocolate Chip Muffins

These banana chocolate chip muffins are an easy, make ahead breakfast that you can grab and go. They are moist, just sweet enough, and much healthier than any prepackaged muffin. I love making this recipe on Sunday nights, and having them ready for the work week. I highly recommend heating these up in the microwave for 10-15 seconds so that they’r extra soft and melty.

Ingredients (12 muffins)
-4 medium sized bananas (extra ripe)

Wet Ingredients
-2 eggs
-1/4 cup olive oil
-1/4 cup honey
-1/4 cup milk

Dry Ingredients
-1 ¾ cups flour
-3/4 cup semi sweet chocolate chips
-2 tsps cinnamon
-2 tsps baking soda
-Pinch of salt

Instructions (35 minutes)
1. In a large bowl, mash the bananas with a fork until smooth. Then stir in all of the wet ingredients (eggs, olive oil, honey, and milk.)
2. Add in all of the dry ingredients (flour, chocolate chips, cinnamon, baking soda, and salt,) and fold until everything is well incorporated.
3. Spoon the batter evenly into 12 muffin liners, and bake at 325 degrees F for 25 minutes.
