Perfect Mushroom Gravy

Mushroom gravy is something that I crave in the Fall- either on mashed potatoes or turkey, and everything in between! It took me a few attempts to recreate my perfect gravy, and this recipe is it! It’s my perfect color, consistency, and flavor for a gravy. There’s only a few ingredients, and you won’t believe how quickly this thick, delicious gravy comes together. This gravy also proves that you don’t need a ton of lard or butter for it to be decadent. I like to eat this with simple chicken and mashed potatoes during the week, but it could also be a part of your Thanksgiving dinner!

Ingredients (4 servings)
-8 oz baby bella mushrooms, sliced
-2 tbls butter
-2 tbls flour
-1.5 cups chicken stock
-1 tsp fresh thyme
-Olive oil
-Salt & pepper

Instructions (20 minutes) 
1. In a pot over high heat, add in the sliced mushrooms and sauté for 5 minutes until browned. Transfer the mushrooms to a dish.
2. Over low heat, melt the butter and sprinkle in the flour. Whisk and cook for 1 minute.
3. Slowly whisk in the chicken stock until smooth. Add in the fresh thyme, and season with salt and pepper. Continue simmering over low heat for 5 minutes to thicken.
