About This Recipe:
Lil Frankie’s is an iconic Italian restaurant in Manhattan, and it is most known for the spaghetti limone. Even though the dish is insanely easy to make, there is something addicting about spaghetti with lemon juice, butter, and tons of parmesan. The citrus cuts through the rich butter and parmesan so well, and before you realize, your entire bowl will be gone. This recipe is definitely much lighter than the one served at Lil Frankie’s, but it’s still so satisfying and delicious. It’s the perfect 20 minute meal to make during the work day, served with a simple salad or roasted vegetables on the side.
Enjoy!
Ingredients (4- 6 servings)
-1 lb spaghetti
-6 tbsps unsalted butter
-2 garlic cloves, minced
-2 cups reserved pasta water
-2 lemons, juiced
-3/4 cup grated parmesan
-Basil, for garnishing
-Salt
Instructions (20 minutes)
1. In a large pot, bring water to a boil and cook the spaghetti until it is al dente (about 9 minutes.) Once it is done, reserve 2 cups of the pasta water, then drain the spaghetti and set aside in a bowl.
2. Back in the pot over low heat, melt the butter and stir in the garlic for one minute. Add the spaghetti back into the pot and pour in the lemon juice and pasta water.
3. Slowly sprinkle in the parmesan and constantly toss in order to avoid any clumps in the sauce. Season with salt, and garnish with basil.
