Creamy Tzatziki Dip

Greek food is one of my favorite types of cuisine, and the dips are part of what makes it so delicious. There are a number of amazing Greek dips, but tzatziki is definitely towards the top of the list for me. Tzatziki is actually super simple to make- the hardest part is grating the cucumber and squeezing out all of the liquid. Other than prepping the cucumber, it’s just a matter of stirring to bring together the dip. I chose to use 2% Greek yogurt, but you can use any type of plain Greek yogurt. And of course, you have to have some fluffy pita bread and crunchy vegetables to serve this with.

Ingredients (4 servings)
-1 large English cucumber, grated
-1.5 cups plain Greek yogurt
-1/2 small lemon, juiced
-1 tbl dill, finely chopped
-Olive oil, for garnishing
-Salt

Instructions (20 minutes)
1. In a large bowl, add in the grated cucumber and sprinkle with salt to help draw out all the water. Let sit for 5 minutes and then squeeze to remove as much liquid as possible.
2. In a medium sized bowl, mix together the grated cucumber, Greek yogurt, lemon juice, and dill. Season with salt and drizzle with olive oil.
