
About This Recipe:
Making jam is as easy as can be, and as delicious as can be. And since it’s rhubarb season, what better way to celebrate than some strawberry rhubarb jam?! I was very excited that my online grocery store had fresh rhubarb because strawberry rhubarb is one of my favorite jam and pie flavors. Definitely do not skip the lemon juice because it helps break down and thicken the fruit from what I read. And of course, taste your jam to adjust your sugar levels (I found that 1 cup was perfect for my fruit!)

Ingredients (14 oz jar)
-1 pint strawberries, cored and chopped
-4 rhubarb stalks, chopped
-1 cup white sugar
-1 tbl lemon juice
Instructions (30 minutes)
1. In a pot over low heat, add in the strawberries, rhubarb, sugar, and lemon. Simmer on low heat until the fruit breaks down and thickens (about 20-30 minutes.)
2. Crush some of the fruit with the back of a spoon to get your desired consistency. Jar and refrigerate.
