
About This Recipe:
Shrimp saganaki is a super delicious and easy Greek dish that is basically a tomato shrimp stew. I believe saganaki just refers to any Greek dish that is prepared in a cast iron or heavy bottomed pan, but you can of course cook this in whatever works. This dish has some of my favorite ingredients- shrimp, tomatoes, feta, and a bit of spice! If you want more of a mild spice, I recommend starting with just 1/2 tsp of crushed pepper flakes and tasting it first. I like to serve this with toasted bread, or on top of pasta or rice. Shrimp saganaki is a simple crowd pleaser- opa!

Ingredients (4 servings)
-1.25 lbs shrimp
-1 small onion, finely diced
-4 garlic cloves, minced
-1 tbl tomato paste
-1 tsp dried oregano
-1 tsp crushed red pepper flakes
-1/4 tsp paprika
-14 oz crushed tomatoes
-4 oz feta cheese, crumbled
-2 tbls parsley, chopped
-Olive oil
-Salt and pepper
Instructions (30 minutes)
1. In a cast iron skillet over medium heat, add in 2 tbls of olive oil and sauté the onion for 5 minutes until softened. Then add in the garlic and stir for another minute.
2. Mix in the tomato paste, oregano, red pepper flakes, and paprika, and cook for 1-2 minutes to concentrate. Then pour in the crushed tomatoes and simmer covered for 5 minutes.
3. Place the shrimp in the pan and continue simmering (covered) for 4-5 minutes until the shrimp is fully cooked. Season with salt and pepper.
4. Top the dish with the crumbled feta and parsley, and simmer for a few minutes to slightly melt the feta.
