
About This Recipe:
BBQ sauce always brings me back to childhood summers, and I wanted to experiment with making my perfect BBQ sauce. There are some amazing BBQ sauce options at the supermarket, and I love McDonald’s BBQ sauce, but this spice rub + BBQ sauce combo is my at home go to. The base of many BBQ sauces are fairly similar, so it’s just about customizing the ratios to suit your personal preference. There isn’t great BBQ near me, so this definitely hits the spot.

Ingredients (4- 6 servings)
-2 lbs chicken thighs, bone in & skin on
Spice Rub
-1 tsp garlic powder
-1 tsp onion powder
-1 tsp paprika
-1/2 tsp cumin
-Salt & pepper
BBQ Sauce
-1/2 cup ketchup
-1/4 cup brown sugar
-2 tbls red wine vinegar
-1 tbl dijon mustard
-1 tsp paprika
Instructions (45 minutes)
1. Place the chicken thighs on a wire rack on top of a lined baking sheet. In a small bowl, mix together the spice rub and evenly sprinkle on the chicken.
2. Roast the chicken at 425 degrees F for 25 minutes. While the chicken cooks, add the BBQ sauce ingredients into a small sauce pot and heat on low heat for 5 minutes.
3. Remove the chicken and baste with half of the BBQ sauce. Continue to roast for another 15-20 minutes until fully cooked.
4. Serve with the remaining BBQ sauce and your favorite sides.
