If you are looking for an interesting twist on fish, this spicy tomato braised dish is exactly what you need. This recipe is a cinch to make, and can be cooked in one pot. I specifically used cod in this instance, but any type of white fish such as swordfish or halibut would also work great. You can use this technique to cook the fish, and change up the seasonings based on your preferences. All you need is a side of asparagus and some toasted sourdough bread to soak up the tomato sauce.

Ingredients (4 servings)
-2 lbs cod, cut into 4 pieces
-1 small onion, diced
-4 garlic cloves, minced
-14 oz crushed tomatoes
-1/2 cup water
-2 tsps garam masala
-1 tsp cumin
-1/2 tsp crushed red pepper flakes
-1 tsp sugar
-Parsley and lemon, for garnishing
-Olive oil
-Salt and pepper
Instructions (25 minutes)
1. In a Dutch oven or skillet over medium heat, sauté the onion for 5 minutes until golden. Add in the garlic and cook for one minute.
2. Pour in the crushed tomatoes and water, and bring to a boil.
3. Season with the garam masala, cumin, red pepper flakes, and sugar, and salt and pepper.
4. Place in the cod and simmer on low heat for about 10 minutes until fully cooked. Sprinkle with the parsley, and serve with the lemon slices.
