
About This Recipe:
I have tried dozens of granola brands over the years, but I recently realized that I still haven’t found the perfect one! So I decided to make my own version at home, exactly how I like it. My favorite granola add ins are pumpkin seeds, almonds, and dried cranberries, but I will definitely switch it up and sometimes use chocolate chips, shredded coconut, chopped hazelnuts, etc. I always eat my granola in yogurt parfaits with honey drizzled on top, so I don’t make mine too sweet. Making granola was a lot easier than I had anticipated, and it makes your entire house smell delightful.

Ingredients (6 servings)
-2 cups quick cook oats
-1/4 cup pumpkin seeds
-1/4 cup slivered almonds
-1/4 cup honey
-1/4 cup olive oil
-2 tsps cinnamon
-1/2 tsp nutmeg
-Pinch of salt
-1/3 cup dried cranberries
Instructions (45 minutes)
1. In a large bowl, mix together all of the ingredients except for the dried cranberries.
2. Transfer the mixture to a well oiled lined baking sheet, and slightly pack down so that chunky clusters can form. Bake at 325 degrees F for 20- 25 minutes.
3. Break apart the clusters to your desired size, and toss in the dried cranberries. Let cool for at least 15 minutes because the granola will continue to dry and get crunchy as it cools.
