Broccoli Cheddar Quiche

For an easy at home brunch, try this delicious and fairly healthy broccoli cheddar quiche. This is the perfect recipe for brunch with friends because there is actually very little cooking, and you could make it ahead of time and just reheat it when you are ready. Quiche sounds and looks impressive, but is actually super simple to make. My only note is to definitely steam the broccoli instead of boiling it to prevent the quiche from being too watery. Using a store bought pie crust is the time saving way to go, and is honestly still so good that no one will notice.

Ingredients (6 servings)
-1 large head of broccoli, cut into florets
-8 eggs
-4 oz shredded cheddar cheese
-1 cup milk
-1 pre-made pie crust
-Salt and pepper

Instructions (1 hour 15 minutes) 
1. In a large pot over medium high heat, steam the broccoli florets for 5-6 minutes until tender.
2. In a large bowl, beat the eggs and mix in the cooked broccoli, shredded cheese, and milk and season with salt and pepper.
3. Place the pie crust on a 9 inch round pie dish, and pour the egg filling on top. Bake at 350 degrees F for 1 hour until the center has fully cooked and set. Cool slightly and serve!
