Lobster alla Diavola

About This Recipe:

Who says cooking at home can’t be fancy? Aside from the fact that this dish requires lobster and has an exotic name, it is not intimidating at all and can be prepared in just 30 minutes. This recipe is perfect for a date night at home, or just a solo delicious lunch (because you deserve it!) I love spicy food so I use 2 tsps of crushed red pepper flakes, but feel free to scale based on your preference!

Ingredients (4 servings)
-4 lobster tails
-12 oz spaghetti
-1/2 small onion, finely diced
-2 tbls tomato paste
-14 oz crushed tomatoes
-1/3 cup fresh parsley, chopped
-Olive oil

Seasonings
-2 tsps crushed red pepper flakes
-2 tsps dried oregano
-2 tsps dried basil
-2 tsps garlic powder
-1 tsp sugar
-Salt and pepper

Instructions (30 minutes) 
1. In a pot over medium heat, add in 2 tbls of olive oil and sauté the onion for 4 minutes. Stir in the tomato paste and seasonings, and cook for 2 minutes. Add in the crushed tomatoes and simmer on low heat for 15 minutes.
2. While the sauce is simmering, bring a pot of water to a boil and cook the spaghetti. Once al dente, reserve 1/2 cup of the pasta water, and drain the spaghetti. Add the pasta water to the sauce and season with salt and pepper.
3. Bring another pot of water to a boil, and cook the lobster tails for 4 minutes until cooked through.
4. Combine the spaghetti, sauce, and lobster tails. Stir in the parsley and serve.
