Soy Ginger Arctic Char

About This Recipe:

Arctic char is an underrated fish that I love to order at restaurants and bake at home. It is very similar to salmon in terms of taste and looks, but I find it to have a milder flavor and less fat than salmon. Arctic char would taste great cooked as is with a squeeze of lemon on top, but I decided to make it with an Asian flare (mostly because I was craving jasmine rice.) This recipe is super easy to prepare- you just mix the marinade together and put everything into the oven in one baking dish. It’s also super healthy and quite pretty to look at!

Ingredients (4 servings)

-1.25 lbs arctic char, cut into 4 pieces
-1 bunch of asparagus
-1 bunch scallions
-Sesame seeds, for garnishing
Optional: jasmine rice
-Olive oil
-Salt and pepper

Marinade/Sauce
-1 inch ginger, finely minced
-2 tbls soy sauce
-1 tbl rice wine vinegar
-1 tbl brown sugar
-2 tsps red chili paste
-1 tsp sesame oil

Instructions (45 minutes) 

1. In a large baking dish, pour 1-2 tbls of olive oil and coat the asparagus. Season with salt and pepper and roast for 20 minutes at 425 degrees F.
2. In a bowl, stir together the marinade ingredients and let the fish and scallions marinate in the sauce while the asparagus is cooking.
3. Add the fish, scallions, and marinade to the baking dish on top of the asparagus and bake for another 14-16 minutes at 400 degrees F. Garnish with sesame seeds and serve with rice!
