
About This Recipe:
Thai chicken basil is a great weeknight dinner recipe that is easy to prepare, and just requires one pan for easy cleanup. And before you ask- no, it does not have to be made with actual Thai basil! I could not find Thai basil this time around, and used regular Italian basil. It was still delicious, and tasted close enough to the dish at my favorite local Thai spot. If you enjoy making Asian food at home, I definitely recommend trying to find oyster sauce and fish sauce, because they are very commonly used. Also- feftovers of this dish reheat really well for work lunch the next day, so I always make the full amount.

Ingredients (4 servings)
-1.25 lbs chicken breast, thinly sliced
-1 red bell pepper, sliced
-1 small onion, sliced
-4 garlic cloves, minced
-1 cup fresh basil leaves
-Vegetable oil
-4 cups cooked jasmine rice
Sauce
-1 tbl oyster sauce
-1 tbl soy sauce
-2 tsps fish sauce
-2 tsps chili garlic sauce
-1 tsp sugar
-2 tbls water
Instructions (30 minutes)
1. In a large pan over medium high heat, add in a few tbls of vegetable oil and cook the red pepper and onion for 6-8 minutes until tender. Transfer to a bowl.
2. Add another tbl of oil to the pan, and brown the garlic for 1 minute. Then add in the sliced chicken and cook for 4 minutes until it is mostly cooked through.
3. In a small bowl, mix together all of the sauce ingredients and then add to the pan with the chicken. Cook for another 3-4 minutes until the sauce has thickened and the chicken has fully cooked.
4. Stir in the cooked peppers and onion, as well as the fresh basil leaves. Once the basil is slightly wilted, turn off the heat and serve.
