
About This Recipe:
I had a random craving for a chicken salad sandwich this week, so I decided to make my own version that is much healthier and tastier than the ones at your local deli. This is a very simple and easy chicken salad recipe, I am just swapping out mayo for a tangy Greek yogurt “dressing.” I absolutely love chives, but if you are not a fan, this would also be amazing with dill, thyme, or parsley. Try this elevated chicken salad recipe for your next sandwich craving!

Ingredients (4 servings)
-1 lb boneless skinless chicken breasts
-2 celery stalks, finely chopped
-4 ciabatta rolls
-Romaine lettuce
-1 large tomato, sliced
-Olive oil
-Salt and pepper
Chive Dressing
-6 oz (3/4 cup) plain Greek yogurt
-1/2 lemon, juiced
-2 tbls chives, finely chopped
-2 tsps dijon mustard
Instructions (40 minutes)
1. Season the chicken with salt and pepper, and place on an oiled baking dish and roast at 400 degrees F for 25 minutes (or until fully cooked.) Once cool, chop into small bite sized pieces.
2. In a large bowl, mix together all of the chive dressing ingredients. Then stir in the chopped chicken and celery, and season with salt and pepper.
3. Assemble the sandwiches with lettuce, tomato, and a scoop of the chicken salad.
