Homemade Sloppy Joe’s

As much as I love testing vegan recipes, and recreating classic French dishes, sometimes I just want a meal that hits closer to home. And nothing reminds me of my childhood more than a satisfyingly messy Sloppy Joe sandwich. Growing up, my mom made Sloppy Joe’s with the good ole Manwich canned sauce, but now I much prefer making sauces from scratch. This is an easy 30 minute recipe that requires only the most basic ingredients. You could make the sauce with ketchup, but I definitely prefer the tomato puree and paste combo. This is the type of meal that I crave when I need some comfort in my life.

Ingredients (4 servings)
-1 medium onion, finely diced
-2 garlic cloves, minced
-1 lb ground turkey
-1 tbl brown sugar
-2 tbls tomato paste
-8 oz tomato puree
-2 tbls Dijon mustard
-4 large sesame buns
-Olive oil
-Salt and pepper

Seasonings
-1 tsp paprika
-1/2 tsp cumin
-1/2 tsp chili powder

Instructions (30 minutes)
1. In a large skillet over medium high heat, pour in 1-2 tbls of olive oil and sauté the onion for 5 minutes. Add in the garlic, and stir for another minute.
2. Add in the ground turkey and cook for about 7 minutes until fully cooked. Break up the turkey into small bits, and stir in the seasonings and brown sugar.
3. Mix in the tomato paste, tomato puree, and Dijon mustard, and simmer for 10 minutes on low heat. Season with salt and pepper.
4. Serve on your favorite sandwich bun with a side of chips.
