Pork Tenderloin with Creamy Dijon Sauce

Sheet pan dinners are the way to go for a busy weekday night dinner. This baked pork tenderloin recipe is super simple, but looks and tastes pretty upscale. Just place all of your ingredients on one large sheet pan, put it in the oven, and dinner is basically done. The creamy dijon sauce comes together in under 10 minutes, and is so rich and decadent that you won’t believe it’s made with just a touch of cream and butter, and mostly chicken stock. I think mashed potatoes and string beans are the perfect companions to this dish, but rice pilaf, broccoli, etc would also be amazing!

Ingredients (4 servings)
-1.5 lbs pork tenderloin
-Olive oil
-Salt and pepper
Optional sides: String beans & mashed potatoes

Creamy Dijon Sauce
-2 tbls butter
-1 tbl flour
-2 tbls dijon mustard
-1/2 cup chicken stock
-1/4 cup heavy cream
-1 tsp fresh thyme

Instructions (45 minutes)
1. Place the pork tenderloin on an oiled baking dish, and season with salt and pepper. Bake at 425 degrees F for about 25 minutes until fully cooked.
2. In a small sauce pot over low heat, melt the butter. Whisk in the flour until smooth, and then stir in the dijon mustard. Pour in the chicken stock and simmer for 5 minutes to thicken. Stir in the heavy cream and fresh thyme.
3. Let the pork tenderloin rest for 5 minutes and then slice. Serve with the cream dijon sauce and your favorite sides.
