Fresh Chimichurri Sauce

Looking for an easy and fun twist to your usual chicken and potatoes for dinner? Look no further than this super simple chimichurri recipe. Chimichurri is a light and fresh condiment made predominantly of parsley, garlic, vinegar, and olive oil. You can also make it with cilantro, but I much prefer parsley. This chimichurri would be great on steak or white fish, but I prefer it on pan seared chicken and roasted potatoes. Chimichurri is an uncooked sauce, so it comes together in no time. If you have a small food processor, that would make this recipe even easier, but if not, hand chopping everything works too!

Ingredients (4-6 Servings)
-1 cup parsley, finely chopped
-4 garlic cloves, finely minced
-1/4 cup red wine vinegar
-1/4 cup olive oil
-1/2 tsp dried oregano
-1/4 tsp crushed red pepper flakes
-Salt to taste

Instructions (10 minutes) 
1. In a small bowl, combine all of the chimichurri ingredients.
2. Serve with your entree of choice!
