Halal Cart Chicken

NYC is undeniably the most diverse and interesting place in the world (I might also be biased,) and that leads to the most diverse and interesting food. All over Queens & Manhattan, halal carts can be found serving tasty chicken over rice. After some experimenting, I think I have nailed the at home halal style chicken. I usually have no patience for marinading, but this recipe is all about the marinade. If you’re in a time crunch just 30 minutes will do, but I like to marinade this for 12-24 hours. It creates the juiciest and most flavorful chicken, and is well worth the wait. And you cannot forget the white and red sauce!

Ingredients (4-6 servings)
-2 lbs boneless skinless chicken thighs, sliced
-Olive oil
-Optional sides: romaine lettuce, pita bread, tomatoes, yogurt sauce, hot sauce
Marinade
-1 lemon, juiced
-2 tbls olive oil
-1 tsp cumin
-1 tsp paprika
-1 tsp ground coriander
-1/2 tsp turmeric
-Salt & pepper

Instructions (1 hour) 
1. In a large bowl, mix the chicken thighs with all of the marinade ingredients. Cover and refrigerate for at least 30 minutes and up to 24 hours.
2. In a large skillet over medium high heat, pour in 1-2 tbls of olive oil. Add in the chicken and cook for about 7 minutes until fully cooked.
3. Serve over rice, a salad, or pita bread.
