Lemon Parsley Scallops and Angel Hair

Scallops are a special thing to make at home, and they are incredibly easy to cook. They take just a few minutes on high heat, and are so delicious that you don’t need anything crazy to go with it. I love this combination of the scallops with a light and parsley pasta. I have another post about the perfect seared scallops- here, but had to also share this recipe.

Ingredients (4 servings)
-1.25 lbs large scallops
-1 lb angel hair pasta
-1/4 cup parmesan cheese
-1/4 cup parsley, chopped
-1 lemon, juiced
-Olive oil
-Salt and pepper

Instructions (25 minutes)
1. In a large pot, bring water to a boil and cook the angel hair pasta until al dente. Drain and toss with the parmesan cheese, parsley, lemon juice, and 2 tbls of olive oil. Season with salt and pepper.
2. Place the scallops on a paper towel and pat dry on both sides. Season with salt and pepper.
3. In a pan over high heat, pour in a tbl of olive oil and sear the scallops for 2 minutes per side.
4. Serve the scallops on top of the pasta and garnish with more parsley and lemon if desired.
