
About This Recipe:
Even though I love Mexican food, I don’t often find myself making it at home. But these shrimp fajitas are so delicious and easy to make, and a great weeknight dinner recipe. You could use chicken instead of shrimp, or make these vegetarian with mushrooms and other vegetables. And I don’t think that fajitas are complete without rice, beans, and sour cream so I always have those on the side!

Ingredients (4 servings)
-1.5 lbs shrimp
-1 red bell pepper, sliced
-1 medium onion, sliced
-1 lime, juiced
-Olive oil
-Salt and pepper
–Optional sides: Tortillas, Spanish rice, black beans, sour cream
Seasonings
-1 tsp chili powder
-1 tsp cumin
-1 tsp paprika
-1/2 tsp garlic powder
-1/2 tsp onion powder
-1/2 tsp cayenne pepper
Instructions (25 minutes)
1. In a large skillet over medium high heat, add in 1 tbl of olive oil and sauté the bell pepper and onion for 5 minutes.
2. Add in the shrimp and seasoning mix, and cook for 3-4 minutes until the shrimp is fully cooked. Season with salt and pepper, and toss with the lime juice.
3. Assemble the fajitas on tortillas with rice, black beans, and sour cream.
