
About This Recipe:
Salmon is one of my favorite weeknight dinners to make because it cooks so quickly, and is so versatile. To spruce up regular roasted salmon, a honey soy glaze transforms salmon into a sweet and savory Asian dish. The glaze comes together in just 5 minutes on the stovetop, and is made from a handful of ingredients. I love eating this salmon with rice and roasted broccoli, but it would also be great on a simple salad or with any other roasted vegetable.

Ingredients (4-6 servings)
-2 lbs salmon
-Olive oil
-Sliced scallions, for garnishing
-Optional sides: roasted broccoli and brown rice
Honey Soy Glaze
-1/4 cup soy sauce
-1/4 cup honey
-1/4 cup water
-1 tbl sesame oil
-2 garlic cloves, minced
Instructions (35 minutes)
1. In a small sauce pan over high heat, add in all of the glaze ingredients. Bring the mixture to a boil and reduce for about 5 minutes until it thickens into a glaze. Keep an eye on this as it can quickly bubble over or burn.
2. Cut the salmon filet into portions, and place in an oiled baking dish. Spoon 2/3 of the glaze over the salmon, and reserve 1/3 for later.
3. Bake the salmon at 425 degrees F for about 14- 16 minutes depending on thickness.
4. Once the salmon is done, drizzle the remainder of the glaze over the salmon and sprinkle with scallions.
