For a quick and easy side dish, try out this delicious Greek couscous salad recipe. Couscous is great for when you’re in a hurry because it only takes 5 minutes to cook! And while the couscous is cooking and cooling, you can tackle chopping the rest of the ingredients. This salad is light, fresh, colorful, and the perfect accompaniment for fish, chicken, etc. I put together a simple lemon vinaigrette for this salad, but any variation of this or any another dressing will work. And I love the added touch of the crunchy sliced almonds on top.

Ingredients (4-6 servings)
-1 cup couscous
-2 tomatoes, diced
-1 seedless cucumber, diced
-1/3 lb feta cheese, crumbled
-1/3 cup fresh parsley, finely chopped
-1/4 cup sliced almonds
-Salt and pepper
Dressing
-1/4 cup olive oil
-1/2 lemon, juiced
-1 tsp dijon mustard
-1 tsp honey or maple syrup
-Salt and pepper
Instructions (25 minutes)
1. In a medium sized pot, bring water to a boil and add in the couscous. Turn off the heat and put the lid on the pot. Let sit for 5 minutes and then fluff with a fork.
2. In a small bowl, mix the dressing ingredients and season with salt and pepper.
3. Transfer the couscous to a large bowl and let cool slightly. Mix in the diced tomatoes, cucumber, feta, and parsley, and season with salt and pepper.
4. Toss with the dressing and sprinkle the sliced almonds on top.
