About This Recipe:
One of my favorite suburban outings as a kid was going to California Pizza Kitchen with my family. Say what you want about CPK, but their BBQ chicken pizza always put a smile on my post Costco shopping face. I haven’t taken a trip to CPK in at least 5 years, but I recently thought about this pizza and had to make it myself. I take a shortcut and use pre-made pizza dough (I think the Pillsbury one works just fine) and BBQ sauce, and you could make this even easier by using pre-made rotisserie chicken. This recipe definitely transports me back to another time!
Ingredients (4 servings)
-Pre-made pizza dough (about 14 oz)
-8 oz chicken breast
-1/2 cup BBQ sauce
-1.5 cups shredded smoked Gouda cheese
-1/2 small red onion, thinly sliced
-1 small bunch of cilantro
-Salt and pepper
Instructions (45 minutes)
1. Place the chicken breast in a small baking dish and season with salt and pepper. Roast at 400 degrees F for 25 minutes until fully cooked. Remove and let cool. Then cut into small 1/2 inch cubes and mix with 2 tbls of the BBQ sauce.
2. Take the pizza dough and stretch it out to cover a 12 x 17 oiled sheet pan. Bake the dough for 8 minutes at 400 degrees F.
3. Top the pizza by evenly spreading the remaining BBQ sauce, and then layering with the chicken, shredded gouda, and red onion. Continue baking at 400 degrees F for another 10 minutes. Top with the cilantro and serve.
