Greek Salad

About This Recipe:

Greek salad is a must any time that I eat at a Greek restaurant. It is by far my favorite salad, and is super simple and quick to put together. This salad is only as good as the ingredients, so I get the juiciest, ripest tomatoes that I can find and highly recommend using seedless (or just de-seeding) the cucumbers. I also love using blocks of feta instead of buying crumbled feta- I think it makes a huge difference. And my last tip is to soak the sliced onions in cold water for at least 10 minutes to remove that harsh raw flavor.

Ingredients (2 servings)

-2 large tomatoes
-1 seedless cucumber
-1/2 small red onion, finely sliced
-3 oz feta cheese block, sliced
-1 oz kalamata olives

Dressing
-3 tbls red wine vinegar
-2 tbls olive oil
-1 tsp dried oregano
-1/2 tsp dijon mustard
-Salt and pepper

Instructions (15 minutes) 

1. Soak the sliced onions in a bowl of cold water to remove the pungent taste (for at least 10 minutes.)
2. In a small jar, shake together all of the dressing ingredients.
3. Assemble the salad similar to the picture above.
