Caramelized onions are a beautiful, mesmerizing thing, but they definitely take time to make. It’s a slow process, but the end result is something that is unlike any other type of onion. I love the sweetness of caramelized onions, and how well it works in a creamy dip. The flavor of the onions is so strong and prominent that you honestly cannot tell that this recipes uses Greek yogurt and light sour cream. It’s a super easy swap that doesn’t sacrifice any flavor. Ingredients (4 servings)
-1 large onion, finely sliced
-1/2 cup plain Greek yogurt
-1/2 cup light sour cream
-1/4 tsp garlic powder
-Olive oil
-Salt and pepper
Instructions (1 hour)
1. In a pot over medium low heat, pour in 2 tbls of olive oil and add in the onions. Slowly cook the onions for 30-45 minutes depending on how fine the onions are sliced. Stir whenever the onions start caramelizing to prevent burning and lower the heat if necessary. If the onions look too dry, drizzle in more olive oil.
2. Once the onions are super caramelized, remove from the heat and let cool.
3. Mix the onions with the yogurt, sour cream, and garlic powder, and season with salt and pepper. Let it chill and serve with vegetables and toasted bread.
