Pastry Pepperoni “Hot Pockets”

Like any 90’s kid, I definitely enjoyed a microwavable pepperoni Hot Pocket every now and again. There’s really nothing complicated about making it at home, and it totally feels more satisfying and adult-ish. I happened to have a sheet of puff pastry in my freezer, but you could also make this with pre-made pizza dough, biscuit dough, etc. I stuck with the classic pepperoni and mozzarella cheese, but ham and cheddar cheese would also be delicious. These are so flaky, savory, and gooey!

Ingredients (3 pieces)

-1 sheet of puff pastry
-18 pepperoni slices
-1/2 cup marinara sauce
-1/2 cup shredded mozzarella cheese
-1 egg, beaten

Instructions (25 minutes)

1. Cut the puff pastry sheet into 6 rectangles and place them on a parchment paper lined baking sheet.
2. On one rectangle, spread 1 tbl of marinara sauce (avoiding the edges,) layer on 6 slices of pepperoni, and then top with some mozzarella.
3. Place another piece of pastry on top and crimp the edges with a fork to seal.
4. Brush the top of each “hot pocket” with the beaten egg, and bake at 400 degrees F for 15 minutes. Serve with the remaining marinara sauce for dipping.
