Cacio e Pepe

Cacio e Pepe is basically glorified buttered noodles with cheese. It’s such a popular dish, and so easy to make that I am surprised whenever people order it at a restaurant. If you can make boxed mac & cheese, you can definitely make cacio e pepe. The ingredients list is short and sweet, and this magical dish comes together in 20 minutes. Pair it with a simple salad, and you’re all set for lunch!

Ingredients (2 servings)

-8 oz spaghetti
-2 tbls butter
-1 tsp coarse black pepper
-3/4 cup grated parmesan cheese
-Salt

Instructions (20 minutes)

1. Bring a large pot of water to a boil and cook the spaghetti until al dente. Before draining, reserve 1 cup of the pasta water and set aside.
2. In a pan over low heat, melt the butter and then add the black pepper to toast for 30 seconds.
3. Add 1/2 cup of the pasta water to the pan and then toss in the spaghetti and parmesan cheese. Keep stirring the pasta until the cheese melts and a thick sauce forms. Keep adding the pasta water in small increments if the spaghetti still looks dry.
