
About This Recipe:
As a New Yorker, one of my favorite low key dining experiences are at Peruvian chicken spots. Many neighborhoods in Queens and Manhattan have a local chicken spot, but perhaps the most famous of all is Pio Pio. I always get the roasted chicken quarters, a side of black beans and rice, and maybe some tostones or maduros. The chicken is always super tender, with a crispy skin, and tons of seasonings. And best of all, it’s very simple to recreate at home and as easy as basting chicken with this blend of seasonings and putting it in the oven. And don’t forget the rice and beans!

Ingredients (4 servings)
-4 chicken quarters
-1 lime, juiced
-2 tsps garlic powder
-2 tsps onion powder
-2 tsps paprika
-2 tsps cumin
-1 tsp oregano
–Optional sides: black beans & Spanish rice
-Olive oil
-Salt and pepper
Instructions (1 hour)
1. In a small bowl, mix together the lime juice, all of the seasonings, and 2-3 tbls of olive oil.
2. Place the chicken quarters on a lined baking sheet and thoroughly coat both sides with the seasoning mixture.
3. Roast at 400 degrees F for 40 minutes, then increase to 450 degrees F for 10 minutes to brown.
