Simple Marinated Swordfish

I was thrilled when I saw that Trader Joe’s started carrying fresh swordfish steaks, and I knew that I wanted to throw them on the grill. I absolutely love swordfish because of it’s thick, meaty texture, and how “non fishy” it is. I think swordfish doesn’t need much more than a simple lemon-y marinade, and I like to marinate this overnight for optimal flavor. Of course if you do not have a grill, you could just cook this on the stovetop or even bake it in the oven. I served this with a simple Israeli couscous salad- with cucumbers, tomatoes, endive, and olive oil & lemon dressing.

Ingredients (2 servings)

-2 swordfish steaks
-1/2 lemon, juiced
-1 tbl red wine vinegar
-1 tsp garlic powder
-1 tsp dried thyme
-2 tbls olive oil
-Salt & pepper

Instructions (45 minutes)

1. In a large dish, mix together the lemon juice, vinegar, garlic powder, dried thyme, and olive oil. Add in the swordfish steaks and marinade in the refrigerator for 30 minutes, flipping halfway through.
2. Season the steaks with salt and pepper, and grill (or cook in a skillet on high heat,) for 4 minutes per side until fully cooked.
