
About This Recipe:
Even though there are endless pasta options to choose from, I always end up ordering the same few dishes again and again. And this orecchiette with broccoli rabe and sausage dish is at the very top of my favorites list. It’s a little bit healthy, a little bit fatty, and a little bit carb-y. If you are not a fan of broccoli rabe (it can be just a smidge on the bitter side,) feel free to substitute with spinach, kale, etc. It’s hard to stop after just one bowl of this, so make extra!

Ingredients (4 servings)
-1 lb orecchiette pasta
-1 large bunch broccoli rabe, trimmed
-4 garlic cloves, minced
-3/4 lb Italian sausage, casing removed
-1 lemon, juiced
-1 tsp crushed red pepper flakes
-Olive oil
-Salt and pepper
Instructions (25 minutes)
1. In a large pot, bring water to a boil and cook the orecchiette pasta until al dente. Right before the pasta is done, add the broccoli rabe and cook with the orecchiette for 2 minutes. Drain and set aside.
2. While the pasta cooks, in a large skillet over medium high heat, add in the sausage and brown until fully cooked (about 8 minutes,) breaking up the sausage into small bits. Then add in the garlic and cook for another minute.
3. Toss the pasta and broccoli rabe with the sausage, and season with salt and pepper. Then stir in the lemon juice and pepper flakes, and drizzle with olive oil.
