Chicken Lettuce Wraps

I’ve never actually been to a PF Chang’s, but I’ve seen countless pictures and knock off recipes of their chicken lettuce wraps. So I decided to create this recipe based off of how I would imagine and want this to taste like. These wraps would be a great appetizer, or low carb meal. It’s filling, colorful, and a great mix of textures. Butter lettuce is the perfect vehicle for the filling, but iceberg or romaine would also work. This only takes 30 minutes from start to finish, and you can easily vary the recipe with what you have on hand.

Ingredients (4 servings)

-1 head butter lettuce  
-1 lb ground chicken
-½ small onion, finely diced
-1 red bell pepper, diced
-½ small red onion, finely diced
-¼ cup peanuts, crushed
-Vegetable oil

Sauce
-2 tbls hoisin sauce
-1 tbl soy sauce
-1 tbl rice wine vinegar
-1 tbl honey or agave
-2 tsps garlic chili paste
-½ cup water

Instructions (30 minutes) 

1. In a large skillet over medium high heat, pour in 1-2 tbls of vegetable oil and sauté the onion and red bell pepper for 6 minutes until tender. Transfer to a dish.
2. Add in the ground chicken and brown until it is fully cooked (6-8 minutes.) Add back the cooked vegetables.
3. In a small bowl, mix together all of the sauce ingredients and add to the skillet. Simmer on low heat for 5 minutes so that the sauce thickens.
4. Assemble the lettuce cups by spooning the filling into each cup, and top with the red onion and peanuts.
