
About This Recipe:
Shrimp is the perfect weeknight ingredient because it only takes a few minutes to cook, and it is pretty light and healthy. All it takes is a bit of butter, and a generous amount of garlic, lime juice, and cilantro to turn simple seared shrimp into something special. I love this shrimp over plain white rice, but it would also be delicious with pasta or a side of bread. If you are not a fan of cilantro, you could always swap it out for parsley instead.

Ingredients (4 servings)
-1.25 lbs large shrimp
-2 tbls butter
-6 garlic cloves, minced
-1/4 cup white wine (or stock)
-2 limes, juiced
-1/3 cup cilantro, chopped
-Olive oil
-Salt and pepper
Instructions (20 minutes)
1. In a large skillet over medium high heat, pour in 2 tbls of olive oil and sear the shrimp in a single layer for 2-3 minutes per side. Season with salt and pepper, and transfer to a dish.
2. Melt the butter in the skillet, and then brown the garlic for 1 minute. Then add in the white wine, lime juice, and cilantro, and simmer for 5 minutes on low heat.
3. Add the shrimp back to the skillet and coat with the sauce. Serve over rice.
