
About This Recipe:
Whenever there is a street fair, the most prevalent smell is always the irresistible Italian sausage and pepper rolls. I love the snap of the sausage, the soft roll, and the grilled peppers. I highly recommend using a cast iron skillet or griddle pan if you have one because it adds a nice, smokey-like flavor to the sausage and vegetables. I decided to make it a bit healthier, and used sweet chicken sausage instead of pork, but of course you can use whichever type you prefer. This will hopefully bring you back to those summer street fair days!

Ingredients (4 Servings)
-4 sweet Italian chicken sausages
-1 large onion, sliced
-1 red bell pepper, sliced
-1/2 cup chicken stock
-4 brioche rolls
-Olive oil
-Salt and pepper
Instructions (25 minutes)
1. In a large skillet over medium high heat, pour in 1-2 tbls of olive oil and brown the sausage on each side for 3 minutes.
2. Add in the sliced onion and bell pepper, and sauté for 5 minutes until they start to caramelize. Season with salt and pepper.
3. Pour in the chicken stock and simmer covered on low heat for 5 minutes until the peppers are tender and the sausage is fully cooked.
