Deli Style Fresh Tuna Salad

Tuna salad can be a polarizing dish- you usually either love it or hate it. I absolutely love it, but I can see why people are apprehensive about fish from a can… So I decided to make fresh tuna salad with a piece of albacore tuna which is 100% worth the extra effort. This is my perfect “deli style” tuna salad with hardboiled eggs, crunchy veggies, and mustard + mayo (please try lite mayo it tastes exactly the same.) I love eating this tuna salad with lettuce and crackers, or in a sandwich. It’s fast, healthy, and colorful!

Ingredients (4 servings)
-8 oz albacore tuna steak
-2 hardboiled eggs, chopped (recipe here for perfect boiled eggs)
-2-3 celery stalks, finely diced
-1/2 red bell pepper, finely diced
-1/2 small red onion, finely diced
-1/3 cup lite mayo
-1 tbl mustard
-1/2 lemon, juiced
-Salt and pepper

Instructions (30 minutes) 
1. In a small pot, bring water to a boil and add in the tuna steak. Cook on medium heat for 5-8 minutes depending on the thickness of your tuna, until it is fully cooked.
2. Flake the tuna and combine with the eggs, celery, bell pepper, onion, mayo, mustard, and lemon juice. Season with salt and pepper.
3. Refrigerate for at least 15 minutes and serve.
