Chinese Chicken Salad

About This Recipe:

To be totally clear, there is absolutely nothing “Chinese” about this salad other than a few Asian ingredients in the dressing. However, I do love this random combination of cabbage, edamame, peanuts, and canned mandarin oranges. For the chicken, I like to poach chicken breasts but you can also use rotisserie chicken, grilled chicken, etc. Some variations have bell peppers, crunchy rice noodles, scallions, or cashews, and they all look delicious. The salad itself just requires some chopping and assembling, and the dressing is also a cinch to whisk together.

Ingredients (4 servings)
-1.5 lbs cooked chicken, sliced
-1/2 small head of green cabbage, shredded
-1/2 small head of red cabbage, shredded
-1 cup shredded carrots
-1 cup cooked edamame
-1/4 cup peanuts
-10 oz canned mandarin oranges

Dressing
4 tbls soy sauce
-4 tbls rice wine vinegar
-4 tbls warm water
-1 tbl sesame oil
-2 tsps sugar
-1 tsp sesame seeds

Instructions (15 minutes) 
1. In a large bowl, layer the cabbage, carrots, edamame, peanuts, oranges, and chicken.
2. In a small dish, mix the dressing ingredients until the sugar dissolves. Spoon over the salad.
