With back to school season upon us, I realized that I desperately needed some back to basics recipes. We all need quick, healthy, and filling dinner ideas that require limited prep work, and just a few ingredients. And these simple skillet turkey meatballs are the perfect weeknight dinner for busy people. This recipe takes less than 30 minutes, has only a few ingredients, and can be served with pasta, a side salad, etc for a full meal. Leftovers also keep very well, and you can double this recipe to have on hand for the next few days, or freeze some for when you’re in a pinch.

Ingredients (4 servings)
-1 lb ground turkey
-1/2 cup Italian breadcrumbs
-1 egg
-Olive oil
Seasonings
–1 tsp dried oregano
-1 tsp dried basil
-1 tsp garlic powder
-1 tsp onion powder
-Salt and pepper
Instructions (30 minutes)
1. In a large bowl, mix together the ground turkey, breadcrumbs, and egg. Add in all of the seasonings, and season with salt and pepper.
2. Form 12-14 evenly sized meatballs with the mixture.
3. In a large skillet over medium high heat, heat up 2 tbls of olive oil. Brown the meatballs, and rotate on all sides until fully cooked (about 10-12 minutes.)
