
About This Recipe:
There are a million ways to make wontons, but this is how my family makes them, and they are incredible! Wontons are fairly easy to make (just a little time consuming to assemble,) and a great representation of healthier Chinese food. The only important steps are to make sure that everything is very finely minced, and that the wontons are tightly sealed. The chili sauce is totally optional, but adds a really tasty touch. You could double the wonton recipe and make extra to freeze for a quick weekday lunch.

Ingredients (42 wontons)
Wontons
-Wonton wrappers (Twin Marquis Shanghai Style)
-1/2 lb ground pork
-1/2 lb shrimp, finely minced
-1 cup scallions, finely sliced
-1 tbl grated ginger
-2 tbls soy sauce
-1 egg
Chili Sauce
-1 cup chicken broth
-2 tbls soy sauce
-2 tsps chili paste
-1 tsp chili oil
Instructions (45 minutes)
1. In a large bowl, combine the ground pork, minced shrimp, scallions, ginger, and 2 tbls of soy sauce.
2. Take a wonton wrapper (keep the rest covered with a damp paper towel so that they don’t dry out,) and put 1.5 tsps of filling in the center.
3. Beat the egg in a small bowl. Brush all 4 sides of the wonton wrapper with the egg wash. Fold the wrapper over to form a triangle and then hold it so that it is an upside down triangle. Take the two top corners and fold and twist the right corner to connect with the left corner. Make sure that the wonton is tightly sealed.
4. In a large pot, bring water to a boil and cook the wontons for 5 minutes.
5. While the wontons are cooking, in another small pot heat up the chicken broth. Then mix in the soy sauce, chili paste, and chili oil, and serve with the wontons.
