Homemade Hummus

Today we are going to be those people, and make our own hummus! From what I’ve seen online, it can be quite controversial to make hummus from canned chickpeas, but I think it’s perfectly fine for homemade hummus. I have found that the texture is much better if you remove the skins from the chickpeas, so I highly recommend this step. If you lightly crush the chickpeas, the skins pop right off and you can easily remove it. With this basic recipe you can make countless variations- red pepper hummus, roasted garlic hummus, etc.

Ingredients (8 servings)
-30 oz canned chickpeas (de-skinned)
-1/3 cup tahini
-1/4 cup olive oil
-1 lemon, juiced
-1 garlic clove
-Salt
-Pinenuts and paprika, for garnishing
-Optional side: pita bread

Instructions (15 minutes) 
1. Drain and rinse the chickpeas. Add to a large bowl and lightly crush the chickpeas to help separate the skins. De-skin as much as much as possible for the smoothest texture.
2. In a food processor, combine the chickpeas, tahini, olive oil, lemon juice, garlic, and salt.
3. Scoop the hummus into a serving bowl and garnish with the pinenuts, paprika, and a drizzle of olive oil.
