Tomato season is upon us and there is nothing better to do with fresh, juicy tomatoes than to make an easy tomato bruschetta. This bruschetta is a delicious and healthy recipe that is a perfect appetizer or side dish. It’s quite literally as simple as toasting bread and chopping tomatoes, but so flavorful and addicting. You can use any type of tomatoes- I’ve used plum tomatoes, beefsteak tomatoes, heirloom tomatoes, etc. The tomato mixture definitely tastes better as it sits so that the tomatoes can release their natural juices, so I would recommend letting it marinate for at least 30 minutes (if not a few hours at room temperature.)

Ingredients (4- 6 servings)
-1 French baguette (16 oz)
-2 lbs tomatoes, deseeded and chopped (about 8 plum tomatoes)
-2 garlic cloves, minced
-1/4 cup basil, chopped
-2 tsps dried oregano
-1 tbl balsamic vinegar
-2 tbls olive oil
-Salt
Instructions (45 minutes)
1. In a medium bowl, add in the chopped tomatoes, minced garlic, basil, and dried oregano. Mix with the balsamic vinegar and olive oil, and season generously with salt. Let the tomatoes marinate for at least 30 minutes at room temperature.
2. Slice the baguette on an angle in 1/2-3/4 inch thick pieces. Place the slices on a sheet tray, and toast at 400 degrees F for 8 minutes until golden.
3. Top each piece of toast with a large spoonful of the tomato mixture.
